Wasabi Diced Apple Cucumber

A quick, light appetizer/side dish that you would like as a refreshment, especially if you love the special flavour of wasabi.



Preparation Time: 15 minutes
Cooking Time: 0 minutes
Makes: 4-6 servings



Ingredients
1 apple cucumber (about 300g-350g)
1 tsp wasabi paste
2 tbsp balsamic vinegar
1 tbsp raw sugar
1 tsp teriyaki sauce
1 tsp sesame oil
some fresh Johnny Jump-Ups (optional)



Method
  • I chose apple cucumber because it's my own-grown, you can use whatever cucumber you like.
  • Peel off cucumber skin, remove seeds.
  • Cut cucumber into 2 cm pieces, drain them and dry them using kitchen paper.
  • Put them in a bowl, mix with 1 tsp wasabi paste, 2 tbsp balsamic vinegar, 1 tbsp sugar and 1 tsp teriyaki sauce, whisk until sugar dissolved. Finally, mix well with sesame oil.
  • You can use rice vinegar to replace balsamic vinegar, and add more wasabi paste if you like to have a stronger spicy flavour.
  • Refrigerate for an hour if you like to serve it cold side dish, otherwise, it can be served at once as diced cucumber can easily absorb flavour.
  • Put some edible fresh Johnny Jump-Ups on top for better presentation before serving.
