Wasabi Granita

Granita is the chic and grownup sister to the Slurpie. Originating from Italy, this non-dairy frozen treat can be used as a dessert, a palate cleanser between dishes or as a topping on seafood.

This complements Tuna and Salmon dishes perfectly, particularly cold dishes such as sashimi. I used it as the perfect accessory on my Tuna Sashimi Tacos .

Preparation Time: 4 hours (this includes freezing time)
Cooking Time: 5 minutes
Makes: 100ml

Ingredients
80ml (1/2 Cup) Water
3 Tablespoons Honey
3 Tablespoons Lime Juice
2 Tablespoons Wasabi Paste

Method
  • In a small saucepan combine the water, honey, lime juice and wasabi paste and bring to the boil.

  • Combine all ingredients, bring to the boil and then simmer on a medium heat.


  • Simmer over medium heat for approximately 5-minutes. Set aside to cool for a few minutes.

  • Transfer the wasabi mixture into a small freezer container and place in the freezer for an hour.

  • Transfer the wasabi mixture into the freezer to firm up.


  • Use a spoon or fork to break up the icy mixture and return to the freezer for a further 3 hours or until firm.
