A recipe to satisfy people who crave desserts. Tiramisu is an Italian dish where the sponge fingers are normally dipped in coffee. For this recipe, instead of coffee, i am going to use watermelon. The taste was very refreshing.
This recipe may not be as sweet as some desserts, but it's enough to satisfy your tastebuds.
Preparation Time: 20 minutes
Cooling Time: 5 hours or more (Preferably overnight)
Makes: 5 servings
250ml Pureed Watermelon juice
5tbsp Granulated sugar
16 Sponge finger or Lady finger
250ml Thick Crem for whipping
250g Mascarpone Cheese
1tbsp Cocoa powder
Cut watermelon into smaller pieces. Grate the watermelon using a strainer and collect the watermelon juice. (Optional: Use a blender to make the juice then filter them using a strainer).
Add 2 tbsp of sugar into the watermelon juice and stir well. (Additional: You can also add Cointreau into the syrup).
Open the packet of Lady finger and keep them in the thin plastic tray.
Pour the watermelon syrup into the tray and coat the lady fingers evenly. (You may have to use a little more than the recipe states)
Pour thick cream and 3 tbsp of sugar into a container. Then, start whipping till creamy before the soft peaks form.
Add in mascarpone cheese and mix well.
In a small size pyrex, layer the pre-soaked ladyfingers. (Be careful as the ladyfingers will now be soft and will easily break)
Layer the cream. (Dont worry about the messiness, it will look ok later when it sets)
Repeat the procedure but layering the lady fingers and the cream again.
