The pulp, however, does not taste very nice, so I wouldn't recommend eating it.
Turn it into a lovely spicy pumpkin mash. Toast the pumpkin in the frying pan in butter or coconut oil along with garlic, pine nuts, cumin, coriander, salt and pepper. Mash it all up adding a bit of pure cream and sprinkle with flakes of toasted almond.
Roast that sucker! Chop it into chunks, then roast with a sprinkling of your favourite herbs, a touch of salt, and a light sprinkling of balsamic vinegar.
