With Halloween just around the corner, pumpkin carving is at an annual high, but what to do with all the innards? I don't want it all to go to waste. Can you guys provide me with some ideas? Feel free to post recipe link too.
Turn it into a lovely spicy pumpkin mash. Toast the pumpkin in the frying pan in butter or coconut oil along with garlic, pine nuts, cumin, coriander, salt and pepper. Mash it all up adding a bit of pure cream and sprinkle with flakes of toasted almond.
