My wife and I recently started making quinoa, but we only have the one recipe. Even though that recipe tastes fantastic, it is long and involved. I would love to cook with quinoa more often, and would love some easier recipes. Feel free to share recipes and links in the answers!

I have two quinoa recipes posted up onto my page. I'll post the links too.
Satay Quinoa Stuffed Tomatoes: https://recipeyum.com.au/satay-quinoa-stuffed-tomatoes/

Quinoa, Walnut and Cashew Cheese Balls: https://recipeyum.com.au/quinoa-walnut-and-cashew-cheese-meat-balls/

They are both super yummy and fairly easy to make :)
Thanks Messy Vegan!

The stuffed tomatoes sound amazing! The meat balls are little too involved for what I'm looking for, but the herb sauce sounds delicious, I will certainly trying it :)
Quinoa Chocolate Cake

Not only does this cake contain no wheat, it contains no flour –
made with cooked quinoa (rather than quinoa flour), it has a dense,
moist texture and intense chocolate flavour.
Excerpted from Quinoa 365 by Patricia Green & Carolyn Hemming http://amzn.to/ISURpc

2/3 cup red quinoa
1 1/3 cup water
1/3 cup milk
4 large eggs
1 tsp. pure vanilla extract
3/4 cup butter, melted and cooled
1 1/2 cups sugar
1 cup cocoa powder
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt

Bring the quinoa and water to a boil in a medium saucepan. Cover, reduce
to a simmer and cook for 10 minutes. Turn off the heat and leave the
covered saucepan on the burner for another 10 minutes. Fluff with a fork
and allow the quinoa to cool.

Preheat the oven to 350°F. Lightly grease two 8-inch round or square
cake pans. Line the bottoms of the pans with parchment paper.

Combine the milk, eggs and vanilla in a blender or food processor.
Add 2 cups cooked quinoa and the butter and continue to blend until smooth.

Whisk together the sugar, cocoa, baking powder, baking soda and salt
in a medium bowl. Add the contents of the blender and mix well.
Divide the batter evenly between the 2 pans and bake on the center
oven rack for 40 to 45 minutes or until a knife inserted in the center
comes out clean. Remove the cake from the oven and cool completely in
the pan before serving. Frost if desired. Store in a sealed container in
the refrigerator for up to 1 week or freeze for up to 1 month. Serves 8-16.

One of the world's healthiest foods, quinoa contains a perfect balance of
all eight essential amino acids, and is a great source of protein, making it an
increasingly popular food choice for those looking to incorporate "superfoods"
into their everyday diets. Gluten-free, wheat-free, and nutrient-packed, quinoa
is ideal for those who are health-conscious, vegetarian, and/or physically active,
as well as for those with gluten intolerance, wheat allergies, and other digestive disorders.
My favourites are Quinoa and Banana Porridge - a great way to start the day! Here's the recipe:

and Cheesy Quinoa Rissoles - they take a little longer than the porridge but are totally worth it. Recipe here:

Thanks Clare,

Those quinoa rissoles sound perfect!
This Quinoa, Prawn, Mango & Blueberry Salad is light & delicious. The lemon & basil dressing really finishes it off nicely. The link is:

I love a bit of quinoa cooked with some cranberries and some nuts. It goes fantastically with a nice roast lamb cooked in its sauces for hours on end. Delicious!
