Gooseberry fool for summer barbecues.
I like cooking meringues, and am subsequently known as the Meringue King to all who know me. Not sure if that's considered part of pot luck though...
I have many and keep adding different ones. The easiest is buttered garlic chats.
Cut chats in half, boil until just tender toss in melted butter with lots of garlic in and serve hot. This is ideal pre BBQ taster as well as with the BBQ food.
Second.. Small rounds of .bruchetta spread with goats cheese, then topped with homemade honeycombs then drizzled with honey
I get out the breadmaker. Everyone loves freshly baked bread with real butter.
Grann, As much a I like fresh bread, we never eat it at 'gatherings' as here's more healthy foods to eat, like salads. Also I won't touch bread at a big hotel buffet I go to once a year as theres so many other yummy things to eat there besides bread.

I like to bring desserts, like pavlova, cheesecake, or chocolate torte.
Never been to a 'pot luck'.
Doubt I would, as not aware under what hygiene conditions food's been prepared.
That's the trouble with having a 'food scientist' husband!
I'd never heard of 'Potluck' gatherings either! Perhaps its an English or American/Canadian thing. We only share our food at family picnics about once a year! We don't go in for sweet food, so I usually take 2/3 salads. We don't have people to our house, & our oven has been out of order for years anyway as with the baking!
