Whisky Cheese Biscuits

I was given a birthday voucher from the Cheshire Cheese Company a little while ago, so the other day I had a browse and got myself a free cheese truckle. It was called Irish Whisky & Stem Ginger Cheddar Cheese . With it, I had the idea to make some rather tasty whisky cheese biscuits. If you are unable to buy this special cheese, don't worry, you can still make the biscuits with a few additional ingredients. Based on the brands I used, each biscuit is about 22 calories.

Preparation Time: 45 minutes
Cooking Time: 10 minutes
Makes: 86 servings

Ingredients
200g wholemeal flour
150g margarine
150g Irish Whisky & Stem Ginger Cheddar Cheese (or cheddar cheese, 2 tsp Irish whisky, and 10g crystalised ginger)
1/4 tsp chilli flakes

Method



  • Grate cheese, then mix it in with the flour and chilli flakes (if using, add crystalised ginger and whisky too).



  • Rub in the margarine to form a dough.



  • Roll the dough into a sausage shape, then leave in the fridge to chill for half an hour.



  • Pre-heat the oven to 200 & #3872 ;C/ 180 & #3872 ;C fan/375 & #3872 ;F/5 Gas.
  • Slice the dough into thin biscuits.



  • Bake in the oven for ten minutes.
