I was given a birthday voucher from the
Cheshire Cheese Company a little while ago, so the other day I had a browse and got myself a free cheese truckle. It was called
Irish Whisky & Stem Ginger Cheddar Cheese. With it, I had the idea to make some rather tasty whisky cheese biscuits. If you are unable to buy this special cheese, don't worry, you can still make the biscuits with a few additional ingredients. Based on the brands I used, each biscuit is about 22 calories.

Cooking Time: 10 minutes
Makes: 86 servings
Ingredients
200g wholemeal flour
150g margarine
150g Irish Whisky & Stem Ginger Cheddar Cheese (or cheddar cheese, 2 tsp Irish whisky, and 10g crystalised ginger)
1/4 tsp chilli flakes
Method
Grate cheese, then mix it in with the flour and chilli flakes (if using, add crystalised ginger and whisky too).
Rub in the margarine to form a dough.
Roll the dough into a sausage shape, then leave in the fridge to chill for half an hour.
Pre-heat the oven to 200 ༠C/ 180 ༠C fan/375 ༠F/5 Gas.
Slice the dough into thin biscuits.
Bake in the oven for ten minutes.
