White Chocolate And Cranberry Fudge

This is a simple little recipe which is perfect to create around the holidays. It is easy enough for children to help make as well. The creamy sweetness of the white chocolate contrasts perfectly with the tart taste of cranberries and to me this fudge looks wonderfully festive. When wrapped up in some cellophane with a nice ribbon, it also makes a lovely edible Christmas gift.

Preparation Time: 5minutes
Cooking Time: 5 minutes
Makes: 38 squares

Ingredients
500g white chocolate
1 395 g tin of sweetened condensed milk
3/4 cup of dried cranberries
1 TBS coconut oil

Method
  • Break up the white chocolate into squares and place in a small saucepan.



  • Cook over a low heat, stirring continuously until all the chocolate is melted. Then add the coconut oil and combine well.

  • Into a large mixing bowl, pour in the condensed milk, cranberries and melted chocolate mixture. Then mix the ingredients thoroughly.



  • The chocolate will start to thicken up as you stir, which is fine. Just keep stirring it until the cranberries, chocolate and condensed milk are all blended through.

  • Pour the mixture into a slice tray. I prefer to use one made of silicone, but alternately you can use a slice tray lined first with baking paper.



  • Chill the fudge in the fridge for several hours or preferably overnight.

  • Invert the fudge out of the slice tray and cut with a very sharp knife into small squares.

  • Store in a sealed container in the fridge for up to 3 weeks.
