White Chocolate Chip Pikelets
PIKELETS - these are one of my favourites and in this recipe you can have them plain, or as I did the next day, spread butter on them.
Both ways are delicious and these are far nicer than the bought pikelets and easy to make - a great snack for kids, and if you wanted to, you could leave out the chocolate chips and just have them plain with butter, or butter and jam.
Preparation Time: 10 minutes
Cooking Time: 15 minutes
Serves: About 25
Ingredients
1 cup milk
1½ tbsp coconut sugar
¾ cup bananas, mashed
1 egg
1 cup self raising flour
½ cup white choc chips
Icing sugar, to garnish
Method
Mix the milk, coconut sugar (or brown sugar) and the egg until well combined.
Stir in the mashed bananas.
Gradually mix in the flour, stirring after each addition, and trying to make it smooth.
Do not worry if it is a bit lumpy as this is the bananas and this will not affect the finished pikelet
Heat a non stick, large frypan to medium.
Add a bit of oil, or spray some and put about 1 tbsp of the mixture into the pan - I did about 5 at a time but this depends on the size of your frypan.
Cook until the top starts to form bubbles.
Bubbles beginning to form, so turn them over
Turn them over and cook the other side - this will only take about a minute.
Remove these from the pan, and cover them to keep them warm, or put them in a VERY low oven.
Cooked pikelets
Meanwhile, make the rest of the pikelets in batches, making sure you stir so that the chocolate does not go to the bottom.
Serve the warm pikelets, dusted with icing sugar, either as a stack or individually. I added some blueberries to the side which were very nice as they were slightly tart.
I then ate them cold and spread butter on them, and think I enjoyed them more when cold!
Serve several ways
Great in lunch boxes for children or as an after school treat.
