White Chocolate Pudding

An indulgent pudding with hot creamy sauce.

Preparation Time: 30 minutes
Cooking Time: 35 minutes
Makes: 4 servings

Ingredients
75g white chocolate
65g plain white flour
65g margarine
2 tsp Truvia sweetener (or 130g caster sugar)
2 eggs
1 tsp vanilla extract
40g cocoa butter
125g single cream
25g butter

Method

  • Melt the chocolate over a pan of hot water.
  • Pre-heat the oven to 180 & #3872 ;C/ 160 & #3872 ;C fan/375 & #3872 ;F/5 Gas.



  • Cream the margarine with sweetener/sugar and vanilla extract.

  • Gradually beat in the eggs with a handful of flour.



  • Fold in the remaining flour with the melted chocolate.



  • Pour the mixture into small pudding basin and tap it on the work surface to knock out the air bubbles.



  • Bake in the oven for 35 minutes.

  • Grate the cocoa butter and add to the cream and butter.



  • Heat at a low setting until full combined, and then pour over the pudding.
