White Chocolate Vegan

Making sweet and creamy white chocolate is ricilously easy and much cheaper than buying it at the shops. This dairy free chocolate can be eaten alone, drizzled on cakes and slices or chopped up and thrown into cookies or muffins.



Preparation Time: 10 minutes
Cooking Time: 60 minutes
Serves: 1 tray

Ingredients
2 cups cocoa butter
1 cup powdered sugar
1 1/2 teaspoons vanilla extract
3/4 cups coconut oil

Method
  • Bring a small pot of water to the boil.
  • Create a double boiler by placing a heat-proof bowl on top of the pot. Add the cocoa butter to the bowl.
  • Allow the cocoa butter to melt fully, do not step away, then add in the coconut oil.
  • Stir continuously with a metal whisk or fork.
  • Once the oil and butter have melted and are combined turn the heat off. Stir in the vanilla and sugar and whisk until combined and smooth.



  • Carefully pour the white chocolate into a sectioned chocolate tray or a regular lined tray. Cover with plastic wrap and put into the freezer, leave to set for an hour.



  • Once solid, remove from the freezer and enjoy immediately or keep stored in the fridge in a container.

  • Instead of freezing in a tray you can also cover fruit or nuts with the melted chocolate first then leave to set.

    If dipping strawberries or other fruits in the some of the chocolate transfer a small amount to a separate bowl as not to spoil the rest of the chocolate.
