White Christmas Slice - Vegan & Gluten Free

This is my all time favourite Christmas treat and edible gift throughout the year. The cranberry and nut combination is delicious.

It is quick to make, sets well and does not crumble so can be packaged as gifts.

It is vegan, low FODMAP, gluten, lactose, chocolate and refined sugar free and tastes sensational!

Preparation Time: 5 minutes (plus 8 hours to set)
Cooking Time: 0
Makes: 24 medium sized triangles

White Christmas Slice (Vegan, Gluten Free)
This White Christmas Slice is a delicious combination of nuts, coconut and cranberries

1 cup desiccated coconut
1 cup macadamias (unsalted)
1 tsp vanilla essence
1 - 2 tbsp maple syrup (to taste)
1/4 cup cranberries
1/4 cup pistachios

You will need
A food processer or hand held blender
A baking tray - large for thin or small for thick sized slices.

Blend the coconut and macadamias until the mixture resembles a fine crumb. Do not over blend or it will become a paste,

The coconut and macadamias will look crumb-like not smooth

Add the vanilla and 1 tbsp maple syrup and pulse to combine. Add more maple syrup to taste and pulse.
Add the cranberries and pistachios and pulse in 15 second intervals until they are roughly chopped and combined.

The White Christmas mix

Press the mixture into a lined baking tray and put it into the fridge for 8 hours to set.

Slice and serve or wrap in baking paper as gifts.
Eat and enjoy.
