Whole Baked Orange Snapper

An impressive but simple dish for any dinner party.



Preparation Time: 5 minutes
Cooking Time: 45-50 minutes
Makes: 5 servings

Ingredients
1.5 whole snapper (scaled & gutted)
2 navel oranges
3 tsp of crushed garlic
1 brown onion
3 tsp of crush garlic
30g butter
parsley
olive oil
salt & pepper to season

Method
  • Preheat your oven to 220 degrees.

  • To prepare your fish make sure it has first been scaled and gutted by your fishmonger.

  • Cut one of the oranges into slices and layer them on the bottom of an oiled baking tray, keeping a few slices to go inside the fish.

  • Place the fish on top of the bed of oranges.

  • Thinnly slice your onion and place it inside the fish with the orange, parsley, garlic and butter.

  • Season the fish with cracked pepper and salt and drizzle with olive oil.

  • To finish baste the fish with the juice from the remaining orange.

  • Turn your oven down to 180 degrees, cover the baking dish with foil to steam and cook for 45-50 mins.

  • Serve with roast potatos and greens or a garden salad.
