Whole Roasted Lemon Chicken
I have made this recipe several times as the chicken always turns out so tender and melt in your mouth.
It is also a very easy recipe.
Preparation Time: 10 minutes plus fridge time 3 hours
Cooking Time: 75 minutes
Serves: 4
Ingredients
1 whole chicken
1 clove garlic
2 lemons
2 potatoes, chopped into bite sized pieces
Pumpkin
Any other vegetables
5 extra lemons
Method
Rub salt and pepper into the chicken after cleaning it and drying it. Put in the fridge for the rest of the day.
Cut a few potatoes into golf sized pieces and add two small lemons and a garlic clove or two.
Put into boiling salted water and cook for about 5 minutes. Drain them and allow them to steam for another minute with no water.
Take out the garlic and lemons and fry the potatoes in the pot for a few minutes - this should make them crispier.
Put a knife cut in about 9 places in the lemon and stuff it into the cavity of the chicken.
I added another few cut up lemons.
Bake in a pre-heated oven 190°/170° for about 40 minutes - this depends on the size of the chicken.
Take it out of the oven and put the potatoes and any other vegetables around it - there should now be some gravy that came out of the chicken.
Bake for a further 35 - 45 minutes or until the meat is done and potatoes are nice and brown.
