Wholefoods chocolate brownie with peanut butter frosting

You could eat this chocolate walnut brownie for its high fibre content, heart-healthy nuts, naturally sweet dates and antioxidant-rich cocoa.
Or just enjoy it because it's a brownie, with peanut butter frosting!
Preparation Time: 10 minutes
Chilling Time: 20 minutes
Makes: 30 bite-size servings, or 15 indulgent ones
Ingredients
Brownie:
1 1/2 cups dates, seeds removed
1/2 cup coconut flour
1 cup walnuts or pecans
1 cup desiccated coconut
1/2 cup cocoa powder (or cacao)
1/4 cup honey
Frosting:
1/2 cup crunchy peanut butter
1/3 cup coconut cream
2 tbsp honey
Method
Pour boiling water over the dates, enough to cover.
Add the other brownie ingredients to a food processor, then drain the dates and add them too.
Blend until a dough forms. Small pieces of nuts should still be visible.
Press dough into a cake tin with the back of a wet spoon.
Combine frosting ingredients in the food processor. Spread the frosting evenly over the brownie base.
Chill in freezer until firm (about 20 minutes). Store in fridge.
Tips:
Lining your tin is optional but it helps you lift out the brownie.
The coconut flour helps create the right texture but in a pinch you can replace it with extra desiccated coconut.
To make it easy to get all the honey out of your measuring cup, wet the cup first.
