This is one of my favourites at breakfast, Wholemeal crępes. I don't have them often. That way I enjoy them more.
Preparation Time: 5 minutes
Cooking Time: 10-20 minutes
Makes: Enough for 6-8 people
Ingredients
1/2 cup wholemeal self-raising flour
1/2 cup (75g) plain flour
2 eggs (or 3 egg whites)
1 cup (250ml) water
1/2 cup almond milk
2 tablespoons sugar
Method
Whisk together the flour, eggs, water and milk.
Heat a crepe pan over a high heat, spray lightly with olive oil spray.
Ladle in approximately 1/3 cup of the mixture into pan and swirl to cover.
Cook for 1 min or until small bubbles appear and the edges are crisp.
Turn over and cook for 30 secs. Remove from pan and repeat.
Serve with your choice of fresh berries or banana, even nuttella. Whatever you like.
