Wholemeal Pancakes

A low GI, low fat version of a classic.



Preparation Time: 5 minutes
Cooking Time: 5 minutes
Makes: 6 servings

Ingredients
1 3/4 cup wholemeal flour
3 tsp baking powder
1 cup low fat milk
2 eggs, lightly beaten

Method
  • Combine all ingredients in a bowl. Make sure there are no lumps in the mixture.

  • Heat a non-stick pan (to be on the safe side, I lightly coat my pan with sunflower oil with a silicone pastry brush).

  • Pour portions of the batter into the prepared pan.

  • When bubbles form and pop on the surface of the mixture, flip them over and cook the other side.

  • Repeat until the whole batch is cooked, top with whatever you want.

  • Classic pancake toppings:

    - maple syrup
    - butter
    - strawberries and whipped cream
    - jam
    - butter and sprinkles
    - lemon and sugar

    Gourmet/healthier choices:

    - fresh fruit and ricotta
    - honey/jam and ricotta
    - banana and cinnamon
