Wholemeal Pasta with Smoked Salmon and Asparagus
Although this recipe says "asparagus", you will note there is none in the photos - that is because I put it in the microwave to cook, and there it was after the visitors left that afternoon!
A dreadful shame, but the pasta still tasted nice!
Preparation Time: 10 minutes
Cooking Time: 10 minutes
Serves: 2
Ingredients
100 g wholemeal penne, or any pasta
200 g fresh asparagus, trimmed, and chopped coarsely
100 g smoked salmon, cut up
1½ tbsp capers
3 tbsp chives
50 g baby rocket
Lemon, cut into wedges
Method
Cook the penne for about 10 minutes or as per packet instructions.
Meanwhile cook the asparagus either in a bit of oil in a frypan, or in the microwave if you don't want to dirty a pan!
Drain the pasta, and return it to the pan.
Chop the rocket, chives, and capers, if large.
Add these three ingredients to the drained pasta.
Add the salmon, and "asparagus".
Toss to combine, and serve with lemon.
