Wholemeal Pasta with Smoked Salmon and Asparagus

Although this recipe says "asparagus", you will note there is none in the photos - that is because I put it in the microwave to cook, and there it was after the visitors left that afternoon!

A dreadful shame, but the pasta still tasted nice!

Preparation Time: 10 minutes
Cooking Time: 10 minutes
Serves: 2

Ingredients
100 g wholemeal penne, or any pasta
200 g fresh asparagus, trimmed, and chopped coarsely
100 g smoked salmon, cut up
1½ tbsp capers
3 tbsp chives
50 g baby rocket
Lemon, cut into wedges

Method
  • Cook the penne for about 10 minutes or as per packet instructions.

  • Meanwhile cook the asparagus either in a bit of oil in a frypan, or in the microwave if you don't want to dirty a pan!

  • Drain the pasta, and return it to the pan.

  • Chop the rocket, chives, and capers, if large.


  • Add these three ingredients to the drained pasta.


  • Add the salmon, and "asparagus".


  • Toss to combine, and serve with lemon.
