Wild Rice Squash and Chestnut Fry

This is a delicious variation on your average stir fry, using different flavourings and ingredients

Preparation Time: 10 minutes
Cooking Time: 25 minutes
Makes: 4 servings

Ingredients:

1 Butternut Squash
150g pre-cooked chestnuts
Wild Rice for 4
Unsalted butter
4 cloves garlic
Cream cheese
Kale
Chard
Olive Oil

Method

  • Put the rice on to cook, adding it in a pan with boiling water as per pack instructions

  • Chop the butternut squash into bite sized pieces
  • Halve the chestnuts
  • Finely chop the garlic
  • Trim and roughly chop the Kale and Chard, removing any tough stems
  • Add the olive oil to a large frying pan and fry the butternut squash for 5-8 minutes until soft.
  • Add the garlic and chestnuts and fry for another minute

  • Stir in a knob of butter to add extra flavour
  • Add the Kale and chard and fry for a further 5-8 minutes until the greens are wilted
  • Drain the rice and stir into the vegetables.
  • Turning the heat down very low, stir through the cream cheese.

  • Season and serve
