These salmon nuggets are a great family meal, they taste great and are a perfect way of getting some omega 3 into your kids. They make a good change from chicken nuggets and are healthy too.
Preparation Time: 5 minutes
Cooking Time: 10 minutes
Serves: 2-3
Ingredients
1 can wild salmon (approx. 210g)
1 egg
50g panko breadcrumbs
1/2 tsp Dijon mustard
Juice of half a lemon
A little oil for frying
Method
Fork the salmon in a bowl to break it up.
Add in the rest of the ingredients and mix well.
Roll into balls and then flatten slightly to make patties.
Fry in a little oil over a medium heat, a few minutes on each side will cook these through. They should be crisp and golden on the outside but soft on the inside.
