Winners Profile Jacs Veg Head

Jacintha, Jacs Veg Head , was the winner of our very first Apple Competition , with her delightful dish: Apple Fries with Vanilla Cream .

Jacintha has been writing for RecipeYum for over a year, and has brought us many delicious recipes straight from her own kitchen.

She specialises in vegetarian dishes, and loves to put a healthier twist on more indulgent recipes, such as Reese’s Pieces , Wagon Wheels , and caramel slices . RecipeYum is her first recipe-writing venture.

“I have always loved creating new dishes and am passionate about all things food. As a writer as well, it just made sense to put the two together.”


She is inspired by Nigella Lawson, whose cookbooks, series, and passion for food is infectious. But Jacintha sets her own cooking apart from her muse’s, using little to no butter in her recipes, compared to Nigella’s own love affair with the ingredient. She also finds Instagram a great place to get ideas and recipes for cooking.

On her winning dish, Apple Fries with Vanilla Cream , Jacintha explains that she just loves fruit — and the competition gave her the perfect reason to experiment.

“I eat a lot of fruit and like to try unusual recipes. The pairing of cinnamon and apples is classic, so these flavours were a must; and having recently made fries from eggplants, sweet potato, zucchinis and mushrooms, it was time to give fruit a go!”
