Wok fried Okra

This delightful vegetarian side dish has originated from India. It is a fairly simple recipe to learn for starters.

Preparation time: 5 minutes
Cooking time: 20 minutes
Makes: 4 servings

700 grams Okra
1 onion
A pinch of cumin seeds
Pinch of turmeric powder
Pinch of red chilli powder or cayenne pepper
3 tablespoons of canola oil
Salt as per taste

Wash the okra in lukewarm water and keep it aside for the water to drain out. Chop one medium sized onion finely and cut okra into small bite size pieces.

Heat 3 tablespoons of canola oil in a wok. Tip in the cumin seeds when oil is hot. When the cumin seeds starts to splutter cover it with a lid for a second or two till it stops spluttering. Then add the chopped onions and fry them till it turns golden.

Then add in the cut okra and fry them well in medium to high flame for 5 minutes. Then lower the flame and let it cook for about 6 more minutes. Check occasionally so that it doesn’t catch at the bottom.

Finally add in the dry ingredients salt, turmeric powder and red chilli powder and mix well. Cook for further 4 minutes on medium to low flame. Put the flame on very low and let it cook with a closed lid for another 5 minutes till it becomes nicely fried and soft.

Serving suggestion: Serve it hot with Indian breads or with steamed rice.
