Wood Roasted Salmon On Apple Bases With Creme Fraiche
Wood roasted salmon has a lovely taste and is totally different to cooking the salmon yourself. In this case I have used Huon which I think is the best brand for any type of salmon, and is Australian.
The mixture of all these ingredients go very well together, and would make a great entre even though I had this as my main meal.
Preparation Time: 10 minutes

Makes: 2 servings
Ingredients
1 medium apple (I used Pink Lady)

1½ tbsp thinly sliced chives
1 tbsp Olive oil
Chopped walnuts
Bit of pepper
1 small lemon plus zest
Creme Fraiche
Method
Slice the apple into fairly thin pieces.
Apple should look like thisdo not use end bits
You can then either cut them in half for a bite size base or leave as is (probably easier to eat if cut in half).
Take the skin off the salmon, and flake it.
Add chives, bit of pepper and oil, and mix with the salmon.
Lay this mixture on each of the apple slices.
Add a dollop of creme fraiche to each one, and top with lemon zest.
Serve as an appetizer or entre.
