Wood Roasted Salmon On Apple Bases With Creme Fraiche

Wood roasted salmon has a lovely taste and is totally different to cooking the salmon yourself. In this case I have used Huon which I think is the best brand for any type of salmon, and is Australian.

The mixture of all these ingredients go very well together, and would make a great entre even though I had this as my main meal.

Preparation Time: 10 minutes
Cooking Time: 0 minutes
Makes: 2 servings

Ingredients
1 medium apple (I used Pink Lady)

1½ tbsp thinly sliced chives
1 tbsp Olive oil
Chopped walnuts
Bit of pepper
1 small lemon plus zest
Creme Fraiche

Method
  • Slice the apple into fairly thin pieces.
  • Apple should look like thisdo not use end bits


  • You can then either cut them in half for a bite size base or leave as is (probably easier to eat if cut in half).

  • Take the skin off the salmon, and flake it.


  • Add chives, bit of pepper and oil, and mix with the salmon.

  • Lay this mixture on each of the apple slices.


  • Add a dollop of creme fraiche to each one, and top with lemon zest.


  • Serve as an appetizer or entre.
