XO Stir-Fry Noodles With Ginkgo Nuts For Vitality

Ginkgo nuts are very nutritious and have anti-aging properties. In addition, they can assist in revitalize, energize and recharge our tired bodies.

This noodle dish is aimed to increase our energy level after a long tired week. We need to treat ourselves to some healthy goody meal.

Note: These ginkgo nuts (shell already removed for your convenience) are readily available from Asian grocery or Chinese herbal shops.

Preparation Time: 30 minutes
Cooking Time: 30 minutes
Makes: 6 servings

300g vitality green noodles
100g Ginkgo nuts
150g fresh prawns
50g Korean fish cake
100g broccoli
100g fresh garlic chives
50g cherry tomato
3 tablespoon soy sauce
1 tablespoon xo sauce
1/4 teaspoon white pepper
1/4 teaspoon chicken powder

De-shell and de-vein the prawns.
Marinate the prawns in cooking wine. Season with salt and pepper.
Slice the garlic chives and fish cakes in equal length.
Wash and drain the Ginkgo nuts.

Boil the vitality noodle according to packet instructions.
Set aside to cool.

Heat oil in a fry pan over medium heat, pan fry the prawns until golden. Remove and set aside.

In the same fry pan, cook the fish cake slices. Season with pepper.
Add in the garlic chives and the broccoli.

Toss in the Ginkgo and season with soy sauce, salt and chicken powder.
Add in the noodle to the fry pan.
Season with xo sauce and mix well together.

Add in the prawns and the cherry tomatoes.

Serve in 6 equal portions.

The vitality noodles are mixed with delicious prawns, garlic chives, tomato and ginkgo nuts. A fantastic quick dinner filled with goodness.

I like it a lot.

Note: I use peeled vacuum packed ginkgo nuts. Apparently, the preparation of fresh ginkgo nuts is quite tedious.
