Yeast Free Donut Clouds

This recipe will get you out of strife when you're in a hurry for donuts. They are yeast free so can be made up, fried and ready for hungry tummies in around 20 minutes. Everyone will be satisifed with these light as a feather donut clouds that dissolve on your tongue.

Preparation Time: 10 minutes
Cooking Time: 10 minutes
Serves: 4

Ingredients
2 cups SR flour
3 tbs sugar
1 tsp salt
5 tbs butter, cold
3/4 cup milk
Oil for frying

For Rolling
1/3 cup sugar
1 1/2 tsp ground cinnamon

Method
  • In a bowl, add the flour and butter. Using your fingertips, rub the butter into the flour until it resembles breadcrumbs.
  • Add sugar and salt and stir to combine. Then add the milk and mix until all ingredients are combined.
  • Transfer the mix to a floured surface and knead until a dough ball forms. If the dough is too sticky, add some more flour until it is manageable.

  • Break the dough down into pieces about 1 1/2 tablespoons in size and roll into little balls.

  • Combine the sugar and cinnamon for rolling and set aside for use after the clouds have been fried.
  • In batches, fry on high heat for three to four minutes until golden and cooked through, then remove from the oil and let drain on paper towel for 30 seconds.

  • Using a spoon because the donut clouds are hot, transfer them to the sugar and cinnamon mix and roll until well coated.

  • Repeat until all donut clouds are cooked and covered. Serve.

  • These are best eaten the day they are made.
