Yogurt Pancakes with Apples

These healthy pancakes are slightly sweet with an airy texture. You can replace the apples with any other fruits you like.

Serves: 2

Ingredients
For the pancakes:
½ cup oat flour
1 tablespoon flax seeds, ground
1 teaspoon baking powder
¼ teaspoon sea salt
2 medium eggs
½ cup Greek yogurt
1 tablespoon sunflower oil
For the topping:
1 medium apple, sliced
1 tablespoon raisins
1 tablespoon sunflower seeds
Honey or maple syrup, optional


Method
  • In a large bowl, stir together the oat flour, flax seeds, baking powder and salt.
  • In another small bowl, combine the eggs and yogurt.

  • Add the egg mixture to the flour mixture and mix them together.

  • Heat a large skillet over medium heat and add the oil to the skillet. For each pancake, pour about 2 tablespoons of the batter into skillet. Cook the pancakes for about 2 minutes on each side.
  • Top the pancakes with the apples. Sprinkle the raisins and sunflower seeds over the pancakes. If desired, add some honey or maple syrup to the meal.
