Yogurt Pear Chocolate Cake

This is a delicious moist cake with juicy pear and yummy dark chocolate. The recipe has been adapted from Food52.

Preparation Time: 20 minutes
Cooking Time: 60 minutes
Makes: 9-inch cake

Ingredients



1 1/2 cup flour
2 tsp baking powder
1/4 tsp salt
1 cup plain yogurt
1 cup sugar
3 large eggs
1/2 tsp vanilla extract
1/2 cup canola oil
3 pears (peeled, cored and diced)
250g of dark chocolate chunks

Method
  • Preheat the oven to 180°C and line the bottom of a 9-inch cake tin with baking paper.
  • Whisk the eggs, sugar and vanilla until smooth. Whisk in the yogurt.


  • Stir in the dry ingredients a little at a time. When completely incorporated, fold in the canola oil until the batter looks like the picture above.


  • Pour one third of the batter into the cake tin and sprinkle two-thirds of the pear and chocolate over the batter. Pour the rest of the batter on top of this and smooth it out.
  • Sprinkle the rest of the chocolate and pears on top.


  • Bake the cake for 60 minutes or so or until a toothpick inserted runs clean. Let it cool for 5 minutes before taking it out of the tin.
