Yummy FourBean Curry

This meal is easily whipped up in literally a few seconds and is ideal for when you've got next-to-nothing in the cupboard.



It's vegan, cheap and almost stupidly simple.

Preparation Time: 2 minutes
Cooking Time: 15 minutes
Makes: 2 servings

Ingredients
1 tin four-bean mix
1 tin diced tomatoes
1/2 brown onion
2 cloves garlic
1 - 2 chillies
2 tsp cinnamon
3 tbsp lemon juice
2 tsp vegetable stock powder
Small handful mint or basil leaves (optional)
1 cup rice


Method
  • Dice onion, crush and finely chop garlic and finely chop the chillies. Drain the beans.

  • Gently fry onion, garlic and chillies in a little oil until onion 'sweats' and softens slightly.

  • Stir in diced tomatoes, cinnamon and lemon juice. Bring the pot to a gentle simmer.

  • Stir in drained beans and herbs, sprinkle vegetable stock powder in and stir. Leave to simmer for approx 10 minutes.

  • Meanwhile, cook the rice with 2 cups of boiling water in the microwave, checking and stirring every 5 minutes.

  • When rice is cooked, serve curry over rice and enjoy!
