This is a simple, healthy, zesty crunchy noodle salad.
Preparation Time: 15 minutes
Makes: 2 or more servings
Ingredients 1 carrot
1 red capsicum
1 bag of coriander leaves
1 small can of chickpeas
1 bag of crunchy noodles
The juice of 1 lime, for the dressing. (I wanted a simple, zesty dressing, but if you prefer, you could also add oil (sesame? vegetable?) and soy sauce to this.)
Chop the carrot into matchsticks.
Dice the capsicum.
Roughly chop the coriander.
Drain and rinse the chickpeas.
Juice one lime.
Toss the above ingredients together in a large bowl.
Garnish with crunchy noodles.
If you're making this salad ahead of time (e.g. for a work lunch), pack the crunchy noodles separately and add them at the last minute (saves them going soggy).
You could also try this salad with cherry tomatoes, beef, red onion, chilli; the possibilities are endless.
