This zingy beetroot and feta salad is quick to prepare and makes a nice change from slightly boring leafy green salads. It's great with to go with a BBQ or a tasty steak sandwich.
Preparation Time: 5 minutes
Makes: 2 large servings
Ingredients
3 small cooked beetroot (fresh not pickled)
1/2 lemon
Olive oil
Balsamic vinegar
Small handful flat leaf parsley
Salt and pepper
40g feta cheese
Method
Grate the beetroot ( if you have a grater attachment in a food processor it's quick and a lot less messy).
Add in the juice of half a lemon, splash of balsamic vinegar and a good slug of olive oil.
Finely chop the parsley and mix through.
Crumble over feta and season well.
