Zucchini and sweet potatoes are the perfect partners in crime. Both vegetables are full of nutritional value and natural sweetness. This easy to make, healthy, vegetarian recipe will definitely not leave you with any guilty feelings!
Ingredients 2 sheets of puff pastry, thawed
2 tsp light olive oil
2 medium green zucchini
1 large sweet potato
2 medium onions
3 eggs, lightly whisked
1/2 cup grated tasty cheese
2 tbs plain flour, sifted
Salt and pepper to season
Olive oil spray to grease
Preheat oven to 180°C.
Lightly grease a ovenproof dish (approximately 25cm x 35cm) with the olive oil spray.
Trim and line the dish with the pastry. Using a fork, poke holes into the pastry to allow steam to get out.
Bake for 8 minutes or until lightly golden, puffed. Remove from oven and set aside.
Dice the onions and coarsely grate the zucchini and sweet potato.
Squeeze excess moisture from the vegetables and drain.
In a large bowl combine the onions, zucchini and sweet potato. Add in the egg.
Add in the 2 tsp of olive oil.
Season with salt and pepper and combine the ingredients together.
