Zucchini and Mushroom Hash Browns
An alternative to potato hash browns, something a little more low GI and extra tasty for a cold winters day.
Preparation Time: 20 minutes
Cooking Time: 40 minutes
Serves: 2
Ingredients
1 zucchini
3 brown mushrooms
2 eggs
2 spring onions
1/2 cup of cheese
1/4 cup flour
1 tablespoon olive oil
1/2 teaspoon Italian herbs
Pepper to taste
Method
Preheat oven at 180 degrees celcius
Grate the zucchini and cheese
Strain the zucchini in paper towel and remove water
Dice the mushroom and spring onion
Add all ingredients into a large bowl and stir thoroughly
Place on baking paper on baking tray in shape of hash browns
Bake for 40 minutes
Serve with aoli or mayonnaise
