Zucchini Bacon Soup

Zucchinis are one of my favourite vegetables and they make a a beautiful, silky soup. This is a healthy lunch option and with the added potatoes and protein it will keep you fuller for longer.

Preparation Time: 10 minutes
Cooking Time: 100 minutes
Makes: 6 servings

Ingredients
1.5kg zucchini
750g potatoes
2 onions
2 slices bacon
1 tbs crushed garlic
1 tsp cumin
1 tsp coriander
2 tsp curry powder
1 tsp chilli flakes
8 cups of water
4 tsp chicken stock powder
Cream to garnish

Method
  • Chop the onions and sauté in a large pot.
  • Add the garlic and cook.
  • Slice the bacon and sauté with the onions. This will bring out the rich flavour of the bacon and add another dimension to your soup.

  • Add the three Cs (coriander, curry & cumin) and the other spices and cook off.
  • Peel and cube your potatoes and add to the pot.
  • Add 4 cups of water and the chicken stock. Bring to the boil.

  • When the potatoes have softened, add the sliced zucchini.
  • Add 4 more cups of water (water must just cover the vegetables).

  • Bring back to the boil and simmer until all the ingredients are soft.
  • Remove from the heat and allow to cool.
  • Blend the soup until it is a smooth consistency.
  • Serve with a dollop of cream.
