Zucchini Bacon Soup
Zucchinis are one of my favourite vegetables and they make a a beautiful, silky soup. This is a healthy lunch option and with the added potatoes and protein it will keep you fuller for longer.
Preparation Time: 10 minutes
Cooking Time: 100 minutes
Makes: 6 servings
Ingredients
1.5kg zucchini
750g potatoes
2 onions
2 slices bacon
1 tbs crushed garlic
1 tsp cumin
1 tsp coriander
2 tsp curry powder
1 tsp chilli flakes
8 cups of water
4 tsp chicken stock powder
Cream to garnish
Method
Chop the onions and sauté in a large pot.
Add the garlic and cook.
Slice the bacon and sauté with the onions. This will bring out the rich flavour of the bacon and add another dimension to your soup.

Add the three Cs (coriander, curry & cumin) and the other spices and cook off.
Peel and cube your potatoes and add to the pot.
Add 4 cups of water and the chicken stock. Bring to the boil.

When the potatoes have softened, add the sliced zucchini.
Add 4 more cups of water (water must just cover the vegetables).

Bring back to the boil and simmer until all the ingredients are soft.
Remove from the heat and allow to cool.
Blend the soup until it is a smooth consistency.
Serve with a dollop of cream.
