Zucchini Corn Fritters
These zucchini and corn fritters are amazing for breakfast or brunch. They are easy to make, gluten free and very versatile.
I made these using zucchini and corn but I have also made straight corn, pea,
sweet potato , potato to great success.
Corn and Zucchini Fritters with Garnish.
Preparation Time: 10 minutes
Cooking Time: 6-12 minutes
Makes: 10 fritters (2 serves)
Ingredients
Fritters
1 cup or corn
Half a zucchini grated
1 tablespoon of cheese (your favourite)
2 Eggs
Chilli (optional)
Fresh herbs (whatever you have on hand)
Oil
1/2 cup of corn flour (optional)
Garnish
1 Avocado
1 Lime
Fresh herbs
1 Tomato
Seasoning

Corn, Grated Zucchini and Cheese.
Method
Grate zucchini and squeeze out excess liquid, this is important or the mixture will be very wet.
Mixture ready to cook
In a bowl mix the corn, cheese, eggs, chilli, fresh herbs and grated zucchini.
Smashed Avocado Easy Salsa
Add the flour now if you choose too. I don't use flour which makes these gluten free. Adding flour will make the fritter heavier and easier to flip.
Dollop tablespoon sized amounts of batter into a hot oiled pan.
Dolloped into the Pan
Cook on each side for about 3 minutes or until golden brown.
While the fritters are cooking whip up some easy sides.
Golden Brown Fritters
Smashed avocado: 1 avocado mashed with 1/2 lime juice and seasoning.
Tomato and parsley salsa: chop the parsley and tomato, add 1/2 lime juice and seasoning.
Serve on a bed of rocket and add more fresh herbs and an extra squeeze of lime.
So fresh, zesty and delicious.
