Ingredients 1/4 cup feta, crumbled
1 zucchini, grated
1 carrot, peeled and grated
1/4 cup corn kernels
1/3 cup self raising flour
1/4 teaspoon each paprika and onion powder
1 - 2 teaspoons fresh parsley and oregano, to taste
salt and pepper to taste
6 tablespoons olive oil
Place all the ingredients, apart from the oil, into a large mixing bowl. Combine well with a spoon until it forms a thick batter. It may be stodgy at first, but the moisture from the vegetables will help to form the batter the more you mix it.
In a small pan, heat 2 tablespoons of the oil to a medium heat. Put 2 heaped tablespoons of the mixture into the pan and cook until golden and set around the edges, around 5 - 7 minutes. Gently flip the fritters and cook for another 4 -5 minutes, until cooked through. Remove from the pan and drain on a paper towel.
Repeat this process to make 6 fritters. If you wish, cook in a larger pan, making 3 at a time.
