Zucchini Fritter Stacks w Smoked Salmon
This is a popular cafe-style dish. If you are eating out, it will costs you around $18 and up to $28 if the cafe is by a beach or with a view.
You can make these at home and the process is quite simple.
They taste light, crispy crunch and healthy.
A perfect moreish breakfast, lunch or as a snack.

Makes: 4 servings
Ingredients
500g green zucchini grated
40g Parmesan cheese
10g Parmesan cheese powder
5 tablespoons whole wheat flour
6 eggs
150g smoked salmon slices
10g fresh chives
50g baby lettuce to garnish
6 tablespoon of olive oil
Salt and pepper
Method
Squeeze out the excess moisture from the grated zucchini.
Combine wheat flour with eggs and whisk well.
Fold in the fresh Parmesan cheese and the Parmesan cheese powder.
Season with salt and pepper
The mixture should be well mixed and not too runny.
Divid the mixture into 12 equal portions.
Heat the oil on medium high and gently place the mixture portion in the hot pan.
Flatten slightly to form patty shape.
Cook each fritters for 3 minutes on each side or until crispy golden. Remove.
Keep warm on plates while cook the remaining fritters.
Place a slice of smoked salmon in between fritters and stake them tall.
Add the remaining smoked salmon on top.
Garnish with green chives.
Season with salt and pepper.
Serve warm with some side salad with balsamic dressing.
Optional: add a dollop of sour cream or Tzatziki dip.
Voila! A healthy snack stack filled with goodness and energy.
