For this recipe I have replaced pasta with zucchini. Using a cool spiraller utensil I bought online I have made long thin string like pieces of zucchini like spaghetti.
Zucchini Pasta a new favourite of mine
Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: Serving for one
Ingredients 1 zucchini
1/4 cup of thickened cream
1/2 brown onion diced
2 rashers of bacon
2 cloves of garlic crushed
1 tablespoon of chives chopped.
Using the spiralling utensil twist the zucchini through to make your zucchini spaghetti. Alternatively you can jullienne the zucchini if you don't have the utensil, but it is much quicker an easier if you can pick up one of the utensils.
In a fry pan sauté onion and garlic.
Add bacon to the pan and cook on low until the onion is soft.
Add in cream and chives and cook until the cream reduces by half.
Cream should be reduced by half
Add in zucchini and stir to combine.
Add zucchini to the pan and stir through
Cook for 2-3 minutes to cook zucchini and warm it through.
Serve and enjoy. This would be nice topped with Parmesan cheese if you have it.
