Zucchini Pie Slice

This is a good way to enjoy more vegetables. Some call it a slice, some call it a pie. I call it delicious.

Zucchini Slice

Preparation Time: 15 minutes
Cooking Time: 30 minutes
Serves: 4-6

375 grams of zucchini grated
200 grams bacon diced
100 grams carrot grated (optional)
1/2 brown onion diced
5 eggs
1 cup of self raising flour
1 cup of grated tasty cheese

Preheat oven to 150 degrees fan forced.
In a large fry pan sautée the bacon then add in the onion.
Drain the excess oil with a strainer or on paper towel.
Beat the eggs in a large bowl until combined.
Add the flour and beat until smooth.
Next add zucchini, carrot, onion, bacon and cheese to combine.
Grease and line a 30 x 20cm lamington pan or a square casserole dish works too.
Pour into the prepared pan and bake in oven for 30 minutes or until cooked through.
Remove from the oven and allow to cool before serving.
